All about the Fluke

The fluke, or summer flounder, is a flatfish found along the Atlantic coast of North America, from Maine to Florida. Characterized by its asymmetrical, diamond-shaped body and mottled brown or olive coloration, it is well-adapted to blending with the seafloor. Flukes inhabit sandy and muddy bottoms in shallow waters and estuaries. They are voracious predators, feeding on smaller fish and invertebrates. Highly valued for their mild, sweet flavor and firm texture, flukes are popular in both commercial and recreational fishing.
